Zucchini Muffins

I had the itch to bake tonight. Baking isn't a good thing when you need to loose weight (Ugh baby weight), so I decided it had to be healthy. I tried finding a recipe that worked with what I had, but didn't find one I quite liked. So I made up my own! I had some frozen zucchini in my freezer from this past summer, and apple sauce I had just bought to try it out as a substitute. Well, I came up with these beauties. They are kinda a "healthy" muffin, but my Husband said "MMmmM!! These are SO good!" when he ate them. And I agreed; they are good. Anyways, I thought I would share my recipe.

Zucchini Apple Sauce Muffins

 Ingredients

3 eggs, beaten
1 c unsweetened applesauce
1 c brown sugar + 1c granulated sugar
1 c grated zucchini squash
1 t. vanilla
1 c. whole wheat flour + 1-1/2 c all purpose flour
2 t. cinnamon
1/4 t. baking powder
1 t. baking soda (plus a dash)

Directions

Combine eggs, oil, and sugar until well blended. Stir in zucchini and vanilla. Sift together flour, salt, cinnamon, baking powder, baking soda; stir into zucchini mixture. Pour into well greased muffin tins, bake @350 for 15-20 min. Let sit in pan for a few min, then transfer to cooling rack.

Enjoy!
